Loads of potatoes

We were given a lot of potatoes a few weeks ago, so I wanted to share a few yummy potato recipes we tried out with you!


Spicy Potato Soup

2 pounds ground beef
8 cups cubed potatoes (half inch cubes)
2 small onions, chopped
6 cans (8 ounces each) tomato sauce
8 cups water
4 teaspoons salt
3 teaspoons black pepper
2 teaspoons hot sauce

In a dutch oven or large kettle, brown ground beef. Drain. Add potatoes, onion, and tomato sauce. Stir in water, salt, pepper, and hot sauce; bring to a boil. Reduce heat and simmer for 1 hour or until potatoes are tender and soup has thickened. 

Yield: 14-16 servings (4 quarts)

I really liked this soup, although next time I'd add more hot sauce, because I really like spicy and it wasn't spicy enough! So, if you like spicy add a little more!




Easy Potato Casserole ~ Found on www.allrecipes.com 


Servings: 12

Ingredients: 


  • 1 (28 ounce) package frozen potatoes O'Brien with peppers and onions, thawed

  • 1 (10.75 ounce) can cream of mushroom soup

  • 1/2 cup 2% milk

  • 1/2 cup Daisy Brand Sour Cream

  • 1 cup shredded sharp Cheddar cheese

  • 1 cup shredded Swiss cheese

  • 1 cup shredded Muenster cheese

  • 2 tablespoons dry Panko breadcrumbs

  • 2 teaspoons butter, melted

Directions:

  1. Heat the oven to 350 degrees. Spray a 2-quart casserole with cooking spray.
  2. In a large bowl, combine all ingredients except the bread crumbs and butter until well mixed. Spoon the mixture into the casserole dish. Mix the bread crumbs and melted butter; sprinkle over the potatoes. Bake the casserole for 50 to 60 minutes or until bubbly and potatoes are tender.


 

Quick and Easy Potatoes 

My friend actually made this for me when she came over for a visit on one of the days that I was here watching the children while Mom and Dylan were up in Saint Louis. Thank you again, they were really good!

Just slice up some potatoes, whatever amount you think you will need. Then put them in a mixing bowl and pour some vegetable oil in: just enough so that the potatoes are thoroughly coated. Then add lots of salt and pepper and mix up some more. Pour the potatoes into a casserole dish and put into the oven at 450 degrees for about 45 mins-1 hour. And then I added the cheese when I took them out...because I like cheese a lot. :)


Mojo French Fries ~ Another "All Recipes" recipe! A very yummy one!!!

Servings: 8

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons paprika
  • 1-1/4 teaspoons salt
  • 3/4 teaspoon ground black pepper
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1-1/4 egg
  • 1/4 cup and 3 tablespoons milk
  • 8 potatoes, cut into wedges
  • 1/3 cup vegetable oil

Directions:

  1. Preheat oven to 450 degrees F (230 degrees C). Grease a baking sheet.
  2. Whisk flour, paprika, salt, black pepper, chili powder, and cayenne pepper in a bowl. Whisk egg with milk together in a separate bowl. Dip potato wedges in the egg mixture, then dredge in the seasoned flour. Arrange coated potato wedges on prepared baking sheet. Drizzle wedges with vegetable oil.
  3. Bake in the preheated oven until the coating is browned and the potatoes are tender, 20 to 25 minutes. Serve immediately.

  2. :) looks yummy. We really like potatoes ... we've been canning them lately and they turn out real well that way - always ready right when you need them.
