Pumpkin Muffins

These are one of our favorite kind of muffins! :) I always double the recipe, so I wrote it out doubled below, if you only need a few then you can store some away in your fridge for later!


Pumpkin Muffins

3 1/2 cups wheat flour
2/3 cups sugar
5 teaspoons baking powder
1 1/2 teaspoons salt
2 eggs
1 1/2 cups milk
2/3 cup canola oil
1 cup canned pumpkin
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup raisins

In a large mixing bowl mix everything together. Stir just until mointened. Grease muffin cups or line with paper bake cups; fill 2/3 full. Bake in a 400 degree oven for 20-25 minutes, just till golden. Remove from pans and serve warm. Makes around 24 muffins.
